Botanical Name: Lavandula angustifolia
Previously called (Lavandula officinalis)
Plant: Strongly aromatic, evergreen shrub growing 3.3 to 6.6ft tall. Can Harvest when plant reaches 12inches in height
Light: Full sun
Soil: Well-draining soil. Favors neutral to alkaline soils.
Flower: Pinkish Purple on Spikes
Hardiness: Perennial
Care: Mildly toxic to dogs, cats, and horses. Dry the leaves in a warm airy place. Store in an air tight container.
Good for: Can be used for flavoring and medicinal purposes. Most often used for sachets, and potpourris. Does well in soap and bath products
Botanical Name: Nepeta cataria
Light: Full sun
Flower: Pink/white purple
Hardiness: Perennial
Good for: Can be used for flavoring in tea and calming purposes. Most often used for Cats entertainment, but can be used by humans to aid in bug repellent (low strength replellant)
Attracts beneficial bugs to garden like lacewings and butterflies. Can be invasive as a perennial, similar to peppermint
Botanical Name: Mentha × piperita
Plant: Can reach 12-15in in height. Can Harvest when plant reaches 12inches in height
Light: Full sun
Flower: Small Purple Flowers
Hardiness: Perennial, spreads easily by runners
Care: Works well in a container since peppermint spreads easily and can become invasive. Dry the leaves in a warm airy place. Store in an air tight container.
Good for: Drinks, jellies, fruits and herbal mixes. Also does well in soap and body products.
Botanical Name: Salvia rosmarinus
Plant: 4ft x4ft and larger bush/shrub like. Woody stems with needle like leaves Likes 6-8 hours of Sunlight (Full sun)
Soil/pH: Well-draining, loamy, sandy;
pH: Slightly acidic to neutral
Water: Avoid constant wet roots
Flower: Blue
Hardiness: Outdoor evergreen in Zone 7 and warmer. Use: Aromatic herb with a sweet, resinous flavor.
Care: Needs space to grow. Prune regularly and can prune up to 1/3 of plant. Air-dry sprigs of rosemary and store in an airtight container in the cupboard
Good for: Seasoning poultry, lamb, stews, and soups. Use in bread, and marinade with wine, olive oil, and garlic. Dry stems for cooking, sauces and infused oils.
Fragrant and hardy evergreen herb that has an intoxicating scent. Place in ground near walkways. Grows large enough to be a shrub.
